Blueberry Vanilla cake!

Never thought that I will be able to bake a decent cake. It looked like a lot of work. But after baking some quick brownies, I got the hand of it. One of my friends birthday was coming up so we decided to bake a quick cake. I usually like to follow the recipe exactly but after moving to Germany and inorder to reduce the number of utensils I use, I just trust my gut feelings and use my intuition to measure salt, sugar etc and not be exact in measurements. Most of the time that works fine.

A quick side note, this stories are not recipes but more of my experience following the recipe. I would recommend not to follow my steps and procedure and follow the attached recipe made by experts.

Given the occasion of my friends birthday, we decided to bake a quick cake, but weirdly we decided to bake a Blueberry-Vanilla-Lemon cake without the Lemon. Lets be real, that does not sound like a good combination of ingredients, so we though too, but clearly we were wrong!

Recipe for the cake

We roughly followed this recipe and haphazardly made a cake. Realistically, we would have needed something to beat the batter but we or rather my friend did most of the work. I made quick Bruschettas for 3 people.

Again, ideally I would made the frosting but it took a very long while to bake the cake because the oven was big, and I was opening the oven after every 5 minutes to check if it was done. Bad move my me.

It turned out to be good. Very good actually. After we eating we understood, it would have actually tasted better with lemon in it. May be a little bit of lemon juice or zest would have also done justice.
